Rustica de Nopal A unique salad with chopped onion, cilantro, tomato, queso fresco and its feature ingredient: nopales (noh-PAH-lays), fleshy oval leaves of the prickly pear cactus that are pale to dark green. Nopales have a delicate, slightly tart veggie flavor. Served with a special vinaigrette.

Carnitas de Puerco Slow braised tender porkloin with garlic, chopped onions, and herbs then pulled and carmelized in the oven.

Frijoles Refritos Refried pinto beans cooked with chopped onion, garlic, epazote and spices.
